4 to 5 ripe avocados (always have an extra in the event one is bad)
1-2 Limes squeezed (depends on size and juiciness, always have more to add if necessary)
1/3 cup finely chopped sweet onion
2 TLBP chopped pickled jalapeno (can use fresh, just watch for the “heat”); if use fresh jalapeno, most likely won’t need Hot Sauce.
½ cup chopped tomato
¼ cup diced chilies
1/3 cup Greek yogurt, plain
1/3 cup chopped cilantro
Salt and pepper to taste
Mash avocado with lime juice. Add onion, tomato, jalapeno, chilies yogurt, and cilantro. Mix together without taking out all lumps of avocado. Taste for seasoning. If want hotter can add Tabasco or other hot sauce. Top w/ sliced tomatoes and serve w/ Organic Blue Corn chip or any sliced veggie, like carrots, cucumbers, jicama, etc. I use great spelt pretzels as well.
