BELGIAN WAFFLES MADE HEALTHY!
For traditional results, bake in a deep pocketed waffle iron.
4 eggs, separated
2 2/3 cup organic Buttermilk (be sure you have more in the event the batter is too thick)
2 tsp baking powder
½ tsp salt
1.5 cups flour (mix organic whole wheat and unbleached)
½ cup almond meal
½ cup of butter (I use an organic butter from Trader Joe’s or Costco! NO margarine!! Get that OUT of your frig!!)
I TLBP Sugar (unbleached natural sugar, will be slightly brown! Can get anywhere!)
1 tsp vanilla organic extract
1 tsp Rum Extract
Beat egg yolks and sugar in bowl till light. Add cooled melted butter, buttermilk, vanilla and rum extract. Add flour, almond meal, baking powder & salt. Beat well.
In separate bowl (I use my copper bowl for best results), beat egg whites until stiff and gently fold into batter. Butter waffle iron, bake and serve.
You can add blueberries to batter when on waffle iron, or fresh prior to serving.
