Protein Packed Banana Nut Bread

First I began with Kodiak Cakes, 100% Whole Grain Protein Packed Buttermilk Mix.  See  No surprise at all, they are out of Park City, UT!

I LOVE a good waffle and/or pancake, but let’s face it, most of the mixes out there and in our eating establishments are anything if not 50% sugar and refined flour.  Nothing good about that!  But the ingredients in the Kodiak Cakes was way LOW in sugar and packed in more protein powder. I decided to make some banana nut bread, and the results are not only DELISH, but I added so much more punch for a healthier breakfast or snack!

This recipe will make 2 small loaves, or one large, or around 24 muffins. Make and freeze!  

4 cups Power Cake Mix

2 Cups Buttermilk (get a good one, low in sugar!)

2 Eggs (cage free and organic preferably)

1 cup Brown Sugar (can go less, bananas will sweeten)

½ cup softened butter (not melted and hot)

4 ripe bananas (don’t worry if they are brown!)

2 tsp Cinnamon

1 tsp. Ground Cloves

1 tsp. Ground Nutmeg

1 tsp. Cardamom

2 tsp. Vanilla Extract

1 tsp. Orange Extract (can add a Rum or Bourbon extract as well!)

2 Cups chopped Walnuts 

1 Cup chopped Pecans (or more if you prefer

Crème butter, add eggs and sugar, cream together.   Add ripe bananas and mix well, try not to pulverize!  Add buttermilk.

In larger bowl, add flour and all spices, blend well.  To this, gently mix in the butter, egg, sugar, banana and buttermilk mixture till the flour in wet and blended.  Then gently add the vanilla and orange extract.  To this mix in the chopped nuts.

Coat the pans w/ coconut oil, (can use a paper towel to smear it around), and pour batter to about 7/8 full.  I had a bit leftover so baked in a custard dish, be creative!

Bake at 350 degrees for 25-30 minutes OR until brown on top and an inserted toothpick in the middle comes out clean.  

A WONDERFUL fast breakfast w/ fresh fruit, yogurt or kefir!  Enjoy!
